Good alcoholic intensity in the mouth, very well balanced with acidity. Slightly satiny, it offers a velvety mouthfeel. Notes of wood well combined with the herbs in the initial blend.

The pleasure of the test
Olave vermouth is produced at the Bodega Celler Sort del Castell, located in El Morell, province of Tarragona, where vermouth products are already centuries old and much admired. Olave was born in 2014, with the purpose of modernizing and popularizing a new vermouth palate, very attractive and easy to taste.
Its aromas and botanical notes quickly stand out, giving it a special personality and character. For its preparation, we wanted to maintain a classic process, so as not to lose sight of the importance of tradition, where vermouth maintains its essence.
The base is made by macerating a white wine of the Macabeo variety, wine alcohol and between 60/80 aromas and aromatic spices.
We believe that the key to seducing with this drink is always the perfect balance between flavors and essences.
The overall harmony means that Olave is very suitable to accompany with appetizers, seafood or cheeses.
Also in cocktails it combines very well with other liqueurs, which opens up a wide range of possibilities for tasting and enjoying it.

View: We are faced with a clean, transparent and bright vermouth with a persistent tear.
Offers a light amber color with intense bright orange tones. Dense.
Nose: Intense first impression, presenting an aromatic, fine and elegant profile, with notes of ripe citrus: orange, grapefruit... Pleasantly mixed with elegant herbaceous tones and accompanied by spicy notes: rosemary, thyme, mint, star anise, dictamus from Crete, black pepper... Long and very persistent aromatic note.
Mouth: Powerful vermouth in the mouth, with a very light alcohol level. Intense in flavor, satiny and full. It presents pleasant and intense spicy notes, very marked but balanced. Notes of wood well combined with the herbs in the initial blend. Very balanced acid structure with an alcoholic note and the sweet body of the product.
It is long and persistent and offers a pleasant bitterness. It is a fine, balanced and very structured product.
Service: We recommend serving it cold, between 4º and 6º. It can be served with all types of pickles, Roman squid, cockles, olives and also as an accompaniment to chocolate desserts. Ideal for structured cocktails with body, mixed with aged rums, whiskey, bourbons and vodkas.
